I really have nothing to write about. Life if pretty quiet and slow around here. We're still just waiting. I think I need August to end. It's really a terrible month (sorry to those who have b-days in Aug.). I don't mean to offend anyone but August is intensely hot and muggy, there are no holidays, Russia shuts down... it's an oppressive month. They should delete off the calendar. September, however is an excellent month. It's my birthday month - nice and coolish, can't wait till August is over.

OK, enough of that. I'm feeling better finally - That rotten cold lasted about 2 weeks. Thanks for all your concern and nice words, it helped!

Here in Texas, we have great Mexican food so I thought I'd share one of my favorite and EASY Mexican desserts - It's very rich so consider yourself forewarned!

Tres Leches (3 Milk) Cake

1 yellow cake mix (with pudding) baked as directed in a 13" x 9" pan


Topping:
1 can evaporated milk
1 can sweetened condensed milk
1 pint heavy whipping cream
1/2 cup rum (or to taste - or not at all)

Blend all of the ingredients above in a mixing bowl

To finish:
Poke holes in the cake with a fork all over.
Pour the topping mixture over the cake.
Let mixture absorb completely in the refrigerator.

Cover with whipped cream and sprinkle sweetened coconut over top of cake.

Optional: Add cherries and/or pineapple on top

Yields: 10-12 servings
Prep Time: 20 minutes

I'm glad you are feeling better! 2 weeks?? Wow!

I think alot of us agree about August with Russia. It seems like it has gone pretty slowly, too! Hopefully things will get moving here very soon! Only a few more days until September! :)

Thanks for the recipe! Yum! I'm with everyone one on flipping the calendar ahead a month. Of course it helps that the first weekend in September is a 3 day weekend... ahhh... relaxation! :-)

My birthday is in August, but I can agree to deleting the month as well! Last year at this time I was being told my adoption agency would be accredited any day now! Good thing I switched agencies because they just got accredited last month! So, I understand about tough Augusts AND, I live in Texas now so I am eager for the weather to change!!!!

I'll keep you and Jim in my prayers as you await the call!!!

I remember August being a hard month when we were waiting to go back to Russia to pick up our baby. Glad you got through it! I love fall too!
